Whenever I watch the episode where the Barefoot Contessa makes panna cotta in a heart shape with raspberry sauce, I always want to make it because it looks so beautiful. But I've never had panna cotta and have a suspicion that it too will be jiggly and really OTT moist. Oh, blech--cauliflower. There is just a nasty taste to the stuff and it comes through no matter what you do with it--even deep frying it (like tempura). Ptooey! I'm not big on substitutions in general for things I really like/am totally used to, really - for example, I like turkey, but you will not find me eating a turkey burger. When I want a burger, I want beef. I'd agree on the liver and organ meat, but I grew up with fried okra, and I think most people around here like it pretty well. You can buy it from almost every vendor at the farmers market in the summer. You have to fry it right, though. I don't like it battered, just coated in cornmeal, usually done in a paper grocery bag. That's what I miss most about the paper bags at the grocery. Fried chicken should be coated in one of those. Of course, I don't make fried chicken because it's too mich work, really. No. We have a Walmart, a Food Pyramid and a Sprouts, which I refuse to go in because they owners helped put the last locally owned grocery store (an IGA) out of business because they wanted the location. Or so I am firmly convinced. The land owner raised the rent suddenly and gave the IGA owner no opportunity to come up with anything. And the next thing you know, even before IGA closed, the rumor was going around that Sprouts was coming in. The IGA owner was very good in the community also. He helped any community group that asked. He worked as a bag boy in his own store. One time he saw me walking home from the store and gave me a ride. The store was old and not very big, but it had the best produce and a butcher who would advise you and cut and package stuff special for you. And it had Mexican apple soda, which I can't get anywhere else locally now. You would pick a number out of a hat and it would correspond to a four course tasting menu and then you had to write down as many ingredients as possible for the dish and try to guess as many details about the wine pairing. Whoever got the most at the table would win a bottle of wine (its how they would clean out tge wine cellar of wines that only had one or two bottles left). When I see a frittata all I see is a wedge of dried out, over cooked egg that's crusty brown all over. Just give me scrambled eggs with whatever is in the frittata or omlette.
