Butternut Squash soup would be delicious, especially on a raw day like today. You can also mash some of the squash, season it and put it in individual size portions to freeze. Sometimes I cube butternut squash and roast it along with some other veggies- bell pepper, onions, etc. It makes a nice fall side dish. My husband makes an enchilada sauce from tomatillos.
