We buy it here as St Hubert sauce or SC sauce at Métro, but there are a lot of arguments over Swiss Chalet vs. St Hubert.

And since we're getting sorta Canadian here, one of the PQ things I miss is a guédille. Any kind. I drove around Beauce and la Malbaie and ate them at a lot of food trucks.

I sooo want to try a poutine sometime.  I've become addicted to You Gotta Eat Here!  hosted by Canadian John Catucci.  Never heard of him before but I'm a big fan now.  He's a comic/singer and the food is to die for...or from.  😉

He goes all over Canada and occasionally the US to these wonderful small local cafes, diners, etc. and they show how to make some of their house specialties.  Check it out sometime.  I bet pearlite's been to one somewhere in TO as he goes there a lot.

Yup, he covered several restaurants/diners on Roncesvalles, where luv2lurk and I live. Because of the current situation, restaurants that are surviving [they can't be open as eat-in places] opened up stalls or those Euro-style glass curtain walls out front and sell take out. It's been a nice opportunity to try some of their stuff. And the liquor licensing silently loosened up so that they can sell beer and wine on the street too. I'm only sad that one of the two Maritimes-style fish restaurants is having trouble.

I saw Catucci a few times on the street, but that was a few years ago. Are they still making that show?

If you want a poutine, a real one, make Ricardo's Quebec barbecue sauce--not gravy--and pour it over fries. You can use cheese curds on the fries if you like, but bits of medium white cheddar would do. They're not haute cuisine.

There's so many different kinds of poutine now it's crazy. It just to be the classic with the brown gravy and then Italian poutine with a red sauce and ground beef in it. 

Now you can get poutine with smoked meat, chicken, hotdogs, and lord knows what else. 

I'm a classic girl (although I haven't had one in like 8 years) so brown gravy and cheese curds for me, please.

I had to Google it and the show was on from 2012-2017 so I'm seeing reruns.  All new to me.  And you're right on the variety of poutine.  So many versions....and they all look damn good.   Don't see a hungry emoji or I'd use it....

🇨🇦 Happy Canada Day fellow Canucks 🇨🇦 I have never eaten poutine, so do I have to turn in my citizenship? I do like malt vinegar (or white if malt is not available) on my fries which was strange to Americans years ago when I travelled there.

I think John Catucci featured 4 restaurants on Roncy - 3 of which I have been to - Cafe Polonez (Polish food - pierogis, borsch etc), Barque (smoked meat, pork and chicken) and La Cubana (Cuban food and I went only after seeing the episode - it did not disappoint!) The fourth - Cardinal Rule is now out of business but the episode is famous for John singing about the deep fried mac and cheese balls (I can sill hear it in my head). He did have a show in 2019 called Big Food Bucket List - so watch out for that one OhioSongbird.

I can't believe Environment Canada just issued a heat warning for Toronto - hasn't it already been hot enough? Maybe the library will open as a cooling centre so I can pick up my hold book (curb side pick up has no slots available for 3 weeks) No AC here (and my ceiling fan has decided not to work), so no danger of gravy or anything congealing. I have already become used to wet as a perpetual state.

Looking forward to neighbours setting off fireworks tonight (the cat isn't). There is someone close by that has been setting them off a few times per week since Victoria Day - I can hear, but not see. Has that been happening around you pearlite? Just learned that activity is totally illegal - can only set off fireworks on Victoria Day and Canada Day without a permit. Will not be rushing to the phone to report.

I also love malt vinegar on my fries. 🍟🍁

So I have had poutine, and was not a huge fan.  My relatives in Ontario and Quebec love it.

However, restaurants in Canada a few years back started making a sort of gourmet poutine, e.g., braised short ribs poutine or lobster poutine.  Those I love!  But the original cheese curds, gravy and fries, not so much.

Nah, luv2lurk--poutine's just a variant on chips and gravy. Malt vinegar or nothing--I grew up calling it chip vinegar.

Catucci was also at Defina, the pizza place near Mabel's, and I think, like Guy Fieri, he went to Ace as well. La Cubana's food I found kind of dull, what about you? I'm kind of sad that Stamp's Lane, the Maritime fish place, may be going out--I'd never tried it until lately and it was good. You know, I've never been to Polonez even after decades of living here--anyone I know who has, loves it. But not in this heat for sure.

Yeah, enjoying the damn heat, are we? No--those few days when it was low 20s were nice. But now, if I'm walking south to Sobeys, Benna's, or one of the vegetable stores, it's gotta be early or it's vile.

And yes, we get the idiots setting off amateur fireworks in the Howard School playground any weekend that takes their fancy.

Someone was shooting off a few fireworks Tuesday evening at 7 PM in broad daylight as I was leaving work. I could hear them being released but couldn't see anything. 

It's going to be in the 40s Celsius with the heat index all next week (and I think we're reaching there the past few days already) and I'm not looking forward to it, especially since the AC at work has been broken for weeks and I have to wear a mask and a lab coat.

Here in sunny Ohio it's 91 F and humid as hell.  You walk outside and your glasses fog up.....gonna be like this for the next week.  Boychild is coming down tomorrow for the weekend.  I made chili and it's gonna be chili, hot dogs, salad, veg and dip (peaches famous of course) and banana pudding (son's favorite). Inside thank you very much...we love games and movies so we will be entertained.

Happy belated Canada Day up north and everyone here have a great 4th of July!

Yayyy!  I love the 4th.  Just going to be me and my son this year, which is a bummer, but I’m still gonna cook for him.  On the menu: Taverns (sloppy joes), potato chips, beans, macaroni salad and homemade cheesecake (canned cherry topping).  
 

The kiddo is out right now with his PCA buying fireworks.  Our city has a very liberal yet strict fireworks policy and everyone obeys it pretty well.  Yesterday was the first legal day to purchase and light them off, so it was popping all day, but the 11 curfew hit and it went silent.  The other cool thing is that all of the fireworks tents in our city are to the benefit of non profits (marching band, scouts, VFW, churches).   It’s a pretty slick system we have around here and people seem to respect the rules because of that.

I wish I could figure out how to post a picture because my boy came home from the fireworks tents with a bounty.  And his pride and joy is the “Pooping Dog.”  I wish I could share it all with y’all.  He put $18 on my debit card and came home holding that bag of goodies as if it was a bag of gold.  It made my heart so happy!

It's been sunny and in the 80s all week, and to stay the same over the holiday. I have vacation time I have to take and Mr.Stunt typically closes his office for a week over 4th of July, so we're spending it with my family. Normally, I would stay in town for remote broadcasting from 4th of July festivities, but they've been cancelled. The Thing's are staying in town for work.

Thing2 is thinking about moving back to his campus house; both roommates (not done with school) have temporarily moved home with their parents during the pandemic, and it's been standing vacant since March. It's closer to the 3D print shop, online classes will be starting soon, and he wants to be on his own again. Mr. Stunt says it's female trouble, or the lack there of. 

Five more employees are ill with The Corona, plus 6 family/friends ill or testing positive. The station office I closed down is broadcasting from a remote unit, and I've taken volunteers to cover for the sick talent. A new station manager has been hired, but she won't take residence for two weeks.

MIL is gradually improving, and she was allowed out into the garden for a short walk yesterday evening. She had a genuine smile for the first time in weeks. So did we.

Here in sunny Ohio it's 91 F and humid as hell.  You walk outside and your glasses fog up.....gonna be like this for the next week.  Boychild is coming down tomorrow for the weekend.  I made chili and it's gonna be chili, hot dogs, salad, veg and dip (peaches famous of course) and banana pudding (son's favorite). Inside thank you very much...we love games and movies so we will be entertained.

Panzanella 

8-10 oz stale crusty bread, cubed

22-24 oz ripe mixed tomatoes,, roughly chopped

sea salt

freshly ground black pepper

1-1/2 tablespoons small capers, rinsed and drained

1 small red onion, thin sliced and rinsed in cold water, drained

9 -10 oz jarred red peppers, drained and roughly chopped

8 anchovy fillets in oil,, drained and minced (optional)

red wine vinegar

extra virgin olive oil

a bunch of fresh basil

 

-- Cut stale bread into cubes and set aside to dry. Place tomatoes in a bowl and season with salt and pepper. Add rinsed capers, onions, peppers, bread cubes and anchovies, and toss with tomatoes. Stir in 2 tablespoons of vinegar and about 3 times as much extra virgin olive oil. Taste and add a little more salt, pepper, vinegar or oil, if needed. Remove basil leaves from stems, stir into salad and serve. Delicious with barbecued meats or roast chicken.

Funny, I guess we hear more of the Jamaican dialects here and I remember the first time I saw The Harder They Come [and ran out and bought the album], I didn't have too much trouble understanding the patois dialogue. But then, I remember nobody could figure out what the hell Scotty was on about in "Draw Your Brakes"--the guitar line and backbeat are irresistible, and most of lyrics in the verses verses are fine, but then, "Forward and fiaca...":

Well, I'll throw my potato salad into the ring, just for variety here, so duck! Haha! I have a lot of food intolerances, allergies and sensitivities. No vinegar for me. I didn't always know I had these issues so I used to eat "normal food" and of course I miss it. So I wanted potato salad this summer and here's how I currently make it.

(I was going to list it out like a normal recipe, but I can't do a return with a single line and that's annoying me. And it's not like anybody's going to follow my recipe anyway. So here we go...)

Boil a small amount of peeled and chopped potatoes in one pot and 4 eggs in another. (I boil organic potatoes in spring water and the free range etc eggs in tap water.) While they are boiling, dice 2 stalks of (organic) celery and 1 large jalapeno and add them to a large bowl with a lot of EVOO and some pink mineral salt (salt to taste) to marinate. Once boiled, drain the potatoes and add them to the bowl, mix very well. Then peel and chop the hardboiled eggs and mix them in, well but not to the point that there are no bits of yellow chunks. I like to serve it warm, but it's good cold also.

Gluten free, soy free, grain free, dairy free, fairly low oxalate, sugar free... nothing fermented... and it tastes good to me.

That sounds really good. Have you tried rice wine vinegar? My son's pediatrician told me that no one is allergic to white rice.

Are any of you dealing with a big uptick in fireworks this year?  We've been having them nightly for at least a month - and not small sounds, but big, booming, sounds like explosions sort of noise.  Friday night, and then last night were the worst I've ever heard.  The explosions started around 4:30pm and lasted, without a break until after 1am.  The dog's outdoor times have had to be curtailed because they just don't handle the noise well at all, and yesterday's was so bad I had to drug them.  I hate doing that.

Over the past two fireworks-filled nights - up in Northern California, East Bay - we had at least 18 fires caused by fireworks, one burned down a barn with the horses in it lost, and we've got fire departments and volunteers stretched to the limit putting those out, knowing that any single one could start a wildfire with devastating consequences.   It sounded like the bombing of Baghdad here last night, between the explosions and the sirens of the fire trucks and rescue vehicles.  

And I know this isn't the end of it, not by a long shot.

Over the past two fireworks-filled nights - up in Northern California, East Bay - we had at least 18 fires caused by fireworks, one burned down a barn with the horses in it lost, and we've got fire departments and volunteers stretched to the limit putting those out, knowing that any single one could start a wildfire with devastating consequences.   It sounded like the bombing of Baghdad here last night, between the explosions and the sirens of the fire trucks and rescue vehicles.  

And I know this isn't the end of it, not by a long shot.

I’ve heard that from a lot of people, but if I’m being honest I haven’t noticed it where I live.  Like I said before upthread our city has a very clear fireworks policy and for the most part it is respected.  I heard maybe a few stragglers after midnight (last nights cutoff time).  Now, as per usual, people went crazy during the allowed times, there was still a smoke cloud over the city this morning.

Yep, from ten pm until two am it felt like mortar blasts. Our cat is usually not bothered but this year he was terrified. "Murka, fuck yeah."

There's been fireworks going off like it's the Siege of Leningrad; not all the time, but once it starts, it's a relentless barrage. We have to stay up with the stock to keep them from bolting or hurting themselves. The chickens and Guernseys are off, right along with my father, the vet. It's 1968 in Hue to him.

There were no official 4th of July festivities locally; no parade, no street dance, no rodeo, no carnival, no flea market. The farmer's market went on as usual, and was a madhouse; lots of people back home to visit. Mom and I sold out before 10am. We threw the tent and table in the truck bed and got out. It would have been nice to stay and visit, but The Corona is fierce in California right now.

So our numbers are way down, but Montreal is now fully opened. And in my neighbourhood, very few people are wearing masks. And the park across the street from my house is constantly full of people, we're talking at least 50 people when I was passing by the past two days. And, everyone is clustered together or playing sports. It's honestly terrifying and I'm just waiting for the cases to skyrocket. Although it seems to be taking longer than I had anticipated. 

We're also testing fewer people, but word is it's more younger people being infected these days. As of July 13, it will now be mandatory for those on the bus and metro to wear masks, although the STM has said they can't enforce the rule since they don't have enough manpower. I'm so happy I don't have to take a bus and metro to work anymore.

Hi all - I've been laying low, in a funk.  Doesn't happen often, but until I grapple with it, being the true only child that I am, I sort of retreat.  I'm (mostly) over it now.....mostly.  Not to dwell, but I feel a little overwhelmed by the news and the fact that this virus is back as virulently as it was when it started.  What was the shutdown for?  My state, Maryland, is looking good, but in states all around us, there are spikes.  And the outlook does not look good.  Over the weekend, I saw several talking heads who have served in both Democratic and Republican administrations say that we are at the end of the line, almost to a point of no return, in containing this virus.  Yet, as I look around, other countries with far less than the US are open!  Anyhow, enough of that.....lest I be removed from these forums due to a political outburst!  Mr. Lovesmesome won't even watch the news with me anymore, I scream at the t.v. like a crazy person.

@Cupid Stunt, I am so happy to hear that your MIL was well enough to go out for a walk in the garden!  I am sure that lifted everyone's spirits.  Hope you enjoy the week with your family.  Also loved your recipe for Panzanella Salad.....similar to one I use, except the recipe I use also has some cucumber and a tiny amount of red onion.  I might try yours, as I like the addition of the anchovies!

@peacheslatour, were you able to get your settlement on the house done?  And what is this "dip" you speak of?  There have been several mentions of it!

@boes, yes!  Fireworks are a thing here where I live, in Columbia, MD.  Even bigger in Baltimore City, where it's been going on a couple of weeks prior to the July 4th weekend.  Our local news has even shown video of fights that have broken out where instead of guns, two rivals aim the fireworks at each other!  The whole fireworks things is featured every night on our news....it would appear that it's a boredom thing?  Thankfully, it's not as bad in my town - in the city, people are shooting these things off at midnight all the way until 4 or 5 a.m.  And the kicker?  Residents in these neighborhoods call 911 and there is simply no response.  Weeks of no response, even after one firework went into an open window and onto the bed of a child. 

Oh well, I hope you all had a wonderful weekend.....back to your regular programming, Groundhog Day!

Change of pace. Because I think a lot of us are getting kind of frayed at the edges--virus-wise, nothing desperate here, but masks became mandatory in all public venues today.

Ennio Morricone--I'm sad; he was a genius as a composer, and had a really wide range beyond film scores.

One of those odd notes, related to the Little Alex image and Kubrick. After 2001, Clockwork showed me so much about movies; I'm still flabbergasted by how extraordinary it is. And Kubrick was amazing with scores [you may remember the mid-air planes phallically refueling at the start of Strangelove to the strains of "Try a Little Tenderness"]. So Clockwork yanked me out of the pond of pop and blues again, back to classical. That weird oscillation between types of music is always with me.

Same here.  music is my solace, soundtrack and life.  Boychild came down for the 4th and we listen to music.  I have about 400 CDs here at home (much easier to use and we can randomize) and about 2000 albums, 45s and 78s at the shop for sale.  All genres.  So over the weekend between pigging out and walking the 'estate' we played all kinds of games and listened to Miles, Stevie Ray, James Brown, Allison Krauss, Ella & Louis (one of my all time favorite records), Steely Dan, Henry Mancini, Zeppelin, Beatles  CCR, War, Pink Floyd, Seal, Queen....you get my drift.  It was a wonderful weekend.

Except for Friday morning.....

Hubs was mowing the grass before boychild got here....due 2pm.  I was in the living room with my head phones on and I heard the sliding door open.  I said  "Hey, how's it goin'?"  No answer (he wears sound suppressing earphones so I figured he didn't hear me).  A few minutes later the door opens again and I repeated my question.  No answer.  So I go look and there are 2 fire extinguisers sitting on the back deck.  Hubs came to the back door....WTF is goin' on?  The mower caught fire as you probably guessed.  Burnt to a crisp. It was old anyway and had been smoking for a while.  So Saturday afternoon Dad and son went on the manly trip to buy a new one.  So we now have a purdy new mower.  Delivered yesterday.

All is now well at Casa Songbird.....

The house is supposed to close on Thurs. Ah yes, the dip. I hope Ohio Songbird chimes in because I don't ever measure anything. Here we go:

Equal parts sour cream and cream cheese (I use the whipped kind with chives)

Minced sweet onion (Walla Walla Sweet or similar) about half a cup

Minced green onion, same amount

Celery seed. I can't stress this enough. About two tsps.

Garlic. I use the dried, minced but I'm sure fresh is fine. About one to two tsps.

Salt and pepper.

I serve it with Ruffles because it's thick and needs a strong chip to hold up. I believe Ohio serves it with Ritz crackers.
