leighdear January 21, 2015 Share January 21, 2015 I'm with you, cooks! I wanted the truck lady to get another shot. But then, I'm a sucker for sliders over raw veggies. Good thing the non-cooking friend was intelligent enough (on camera, that is) to bow out of the partnership. But the chef was an idiot to let non-cooker even into the kitchen. The FIRST thing you do in situations like that is get a giant white board and write down a list, with specifics, for the assistant to tend to. If the kitchen is not your usual environment, you will never be able to remember a verbal list of times, ingredients and temps. Non-cooker showed that immediately! I'm intrigued by the sous vide steak. I've put leftover steak or prime rib in a ziplock bag and allowed it to gently warm back up in water, to preserve the rareness, but that's a lot different than a true sous vide. *LOL* 2 Link to comment

So you couldn't find another food truck, or another high-end restaurant to pair them with? Tim talked about the sliders looking like a pile of brown crap. But that's the nature of pulled meat. Doesn't he run BBQ restaurants? No one eats there because the food is pretty. Why did they choose to run with this business? Their menu was incomplete, and one guy was there because the show clearly wants partners. (Otherwise, the popup portion of the show is just footage of him doing work.) The food truck was operating and making a healthy profit, had a proven successful business woman running it, a chef on board with her, and a huge following in good sized market. 1 Link to comment
anonymiss January 25, 2015 Share January 25, 2015 (edited) That was a great episode. I liked his food (and I'm a vegan). It looked and sounded great. The decor and signage was definitely the best they've had on the show, like Joe said. Watching him expedite was cool for me to see since I never really see that other than Gordon Ramsay's style.... Nice of Antonia to be able to cross-promote her restaurants while also offering her actual restaurateur assets in her staff. This guy had a really good friend, but the guy didn't know anything about the restaurant business. He reminded me of all the idiot owners on Restaurant Impossible who open restaurants because they think it will be fun. 2 Link to comment
