Hands down, it's NCIS "Call of Silence" with Charles Durning. I think it's the best episode in the entire series.

S03.E18: The Bait- The team must stop a student, holding six classmates hostage, from detonating a bomb.
I’ve just always like the dynamics of the team in this one and Tony is the lead on the case. 
 

S06:E04: Heartland…the one where they go to Gibbs’ hometown and we meet his dad.

A fun favourite for me is Chained, another S2 episode, with DiNozzo chained to Jeffery, who's suspected of stealing antiquities.

I probably have several.  Two I consistently rewatch is the Charles Durning one and the one where Abby ties up the criminal/assistant  Chip in the van after he kidnaps her. 
 

On LA, it’s the one where Deeks can’t sleep after being tortured. Kensi shows up to watch TV with him and he falls asleep because he feels safe. 
 

On NOLA, it’s ant of the first few seasons when Mary was an agent.
