Why is Rip constantly angry? He just constantly snaps at everyone for no reason, he's definitely a male Beth. Which isn't a positive thing.

Probably because he's beholden to John and that ranch for as long as it exists.  In addition to that he's married to a cranky bitter woman that's attached to her father the man he's beholden to.
