I believe the directors have confirmed that Groot did die. The sapling Rocket got is a descendant of Groot who is learning again; hence why we have baby Groot and Teenager Groot in later movies. 

So the piece of Groot Rocket got doesn't really matter, as long as it was still living enough to take root and start growing again.

I saw it today and I thought it was awesome.   I couldn't believe it.  I'm one of the few people on the planet that was never fond of ANY Star Wars so I expected to be utterly disinterested in GoTG.
