I really like this idea, it would have been a great way of incorporating her profession and workplace into storylines but would bypass the constant "family emergency" issue of the sister's having 9-5 style jobs. When I re-watch season 1 I always feel nostalgic for Quake. I really enjoyed the more relaxed vibe of the restaurant/bar and it seemed like a realistic place for twenty somethings to hang out in. Quake was a lot more versatile - the sisters could go to for food, drinks, coffee etc. I also feel like Quake could lend itself to all sorts of different events - book launches, tarot card evenings, speed dating etc in a way that P3 never could. Add me to the list of people that could never really buy Piper's move into the nightclub business. I would have bought it more if they showed her having any sort of passion towards the club but she always seemed to moan about it or show a complete lack of interest. I always thought Phoebe and Paige were creative types so perhaps they missed a trick by not having the sisters take on a more active role in the business. I thought it was strange that Phoebe didn't do nightclub promotion/bar tending when she was in college in season 2 especially as that's what I thought she did a bit of in NYC? P3 became so irrelevant and it's a shame that Piper's storylines about work dried up, it would have been nice to see her realise her dream of becoming a chef in the later seasons.
I've enjoyed reading the discussion surrounding Phoebe and Paige and the similarities between the two characters. I always wonder how the writers would have tackled this if the show was being made today. I reckon Paige's artistic streak would have been pushed a lot more and she would be a sort of San Francisco hipster type (not in a bad way). Like others have said, an only child is perhaps more similar to an older sibling and by making Paige have a slight pretentious streak (in terms of tastes, where she hangs out etc) I think she would have felt a little more like Prue.
