The writers are free to have each episode cover as much or as little time as they want, not only overall, but in what is going on in independent arcs. If something is going noticeably slow or quick it's because the writers want to get to a particular point at the right time (e.g. Chuck's breakdown at the end of last episode). BB had episodes that were mostly filler until you got to the last few minutes, which contained the next compelling development that'd have you tuning in next time.

One possibility is to take a tip from Catfish and make Raj's relationship(s) be online with someone he never actually sees, so we don't see until the end. It would fit Raj's character to believe any excuses why his "girlfriend" can't videochat or meet up, regardless of how skeptical the others may be. This could be a recurring joke that they pay off with a breakup early on that flashes to his "ex" not being anything like their pix, although I'd hope for a happy ending eventually.

As such, it may make more sense if the show skips forward to something that just confirms that they're engaged, like an offhand comment about wedding arrangements, or somebody asking one of them when they're going to set a date.
