  2. I make Ina's shrimp & orzo salad at least once every summer for a party, & made it on Labor Day weekend for a BBQ I threw. It is, without fail, always the most popular item on the menu with my guests. So easy to make, light, fresh, & different. Plus, it makes a huge amount, so it's perfect for parties. Late to the discussion regarding food & funerals. Here in Jersey the first thing we do is figure out what food we're making or ordering to be delivered to the bereaved. It's all about the food. Lura, could I get your brisket recipe also? I've never made it & have been wanting to give it a go. Thanks!
  3. I was never able to make good fried chicken until I made Ina's oven fried chicken. It's really easy & the pieces get properly cooked in the oven without burning, something I was never able to master on top of the stove.
  4. Thank you for sharing that pound cake recipe; I will try it! larapu, Ina's oven fried chicken is fantastic; it comes out perfectly every time. I made the beef bourgionne with the chuck roast, & it was fantastic. Rave reviews all around. Another easy masterpiece from Ina! I will definitely be making this again. Thank you for the assistance with answering my questions.
  5. Thank you everyone for the input; I will make the chuck roast version! I thought it sounded like an impressive but easy recipe that I could make in the morning & heat up at dinner time. I was thinking of serving it with a salad & maybe garlic mashed potatoes. I don't come here very often because I don't care for the set up of the boards here, so it is really nice to 'see' some old friends & get your advice. I will let you know how it goes- I know it has to be good, because it's Ina! Thanks again!
  6. I would like to make Ina's beef bourguignon for family dinner party. She has 2 recipes; uses chuck roast, & 1 uses filet of beef. I was wondering if anyone has made it, which version they've made, & there review. Thanks!
  7. Bringing it back to gravy- has anyone made Ina's homemade gravy with cognac? It is basically cooking down a lot of onions, making a roux & adding chicken stock & cognac & cream. I have to make a large amount of gravy for a charity event & won't have nearly enough drippings to make enough gravy, so I was thinking of using this. Any reviews would be appreciated; thanks. And Happy Thanksgiving to all!

  9. Love this!! I also like the idea of Jackie/Kate getting her own 24 series. I, too, was wondering why Simone's SIL didn't pick up on the missing finger, but she was wearing black leather gloves. Amazing that she had her finger chopped off 2 hours ago & is now running around London like nothing happened.

  11. Just Googled iron rich foods. Certain nuts & seeds are good; you could add them to a salad. Dried apricots are delicious; for a dessert, do an Ina & dip them half-way in chocolate. So good! I love sausage & beans, & you can do them in a crockpot or as a casserole or on top of the stove. Also chili with beans; make a pot & freeze in individual containers. Make some corn bread as a side & freeze squares of it too. Sweet potatoes are very healthy; your dad can scrub them up & bake them. Ina's roasted broccoli (I make the same recipe & substitute cauliflower) is terrific. Good luck!
  12. How many extra-large eggs does the recipe call for- I would add 1 extra egg (large size) for every 4 extra-large called for in the recipe. I only use extra-large or jumbo eggs. If the recipe only calls for 2 eggs, I think you'll be okay with 2 large, but after that, you'll need to add a bit IMO. Good luck! I am waiting to see some plums turn up here in Jersey. Ina's plum tart is wonderful, & so so SO easy. Can't wait to be able to make it.
  13. chessiegal, I hate mint. IMO, the only thing mint should be in is toothpaste LOL. So I never put the mint in the arugula, watermelon & feta salad, & it is still fantastic. I serve this salad at every summer thing I host, & it has never failed to get rave reviews. As much as I hate the summer's hot, humid weather we have here at the Jersey Shore, I almost can't wait for it just so I can enjoy this salad! Oh- I suggest keeping your watermelon cubes cold until serving- IMO it just sets the salad off- cold, sweet watermelon plays off the salty feta & peppery arugula (yes! I said it!) so beautifully. Enjoy!

  15. I have made so many of Ina's recipes I can't count them all. No holiday or party at my house occurs without at least one, but usually several, Barefoot Contessa recipes appearing. Some of my faves: the orzo with shrimp & feta is fantastic & makes a lot, so it's great for a summer BBQ; the arugula, watermelon, & feta salad is my absolute favorite salad, her shrimp bisque is To. Die. For., & her plum tart is ridiculously simple to make & ridiculously delicious.
